This role is for someone who has grown up in fine dining and understands what it means to care for a guest over the course of a long, thoughtful meal. You bring genuine familiarity with kaiseki or omakase formats — not just an awareness of them — and you're comfortable speaking about Japanese cuisine with both knowledge and ease. You know how a tasting menu moves, and you know how a dining room should feel.
